The Three Little Men in the Wood: Strawberries in the Wood

Ingredients:
- 1 large egg white
- pinch of salt
- 40g granulated sugar
- 1/4t cornstarch
- 1/4t white wine vinegar
- 1/4t vanilla extract
- strawberry sorbet
- fresh strawberries to garnish
- chopped pistachios for garnish
- Preheat the oven to 275F
- Combine the egg white and salt in a stand mixer and whisk on medium speed until firm peaks form. Slowly add the granulated sugar while the mixer is running until firm and glossy. Add the cornstarch, vinegar, and vanilla extract to the whites until combined.
- Scoop the whites into two circles on a parchment lined sheet pan. With a spoon, shape the whites in a circle with a slight divot in the center so it can act as a bowl when served.
- Bake for approximately 45 minutes to an hour until the meringue is light, airy, and dry to the touch. Let it dry on a cooling rack.
- To plate the dessert, place the meringue on a plate and add a scoop of strawberry sorbet and strawberry slices. Garnish with powdered sugar and chopped pistachios.
Note: You can either buy or make your own strawberry sorbet. I made mine in the vitamix with frozen strawberries and enough water or milk to allow it to blend. Sweeten with a bit of sugar to taste.
