The great Leonardo da Vinci, who I’m certain was a warlock, although it’s never been proven, in his masterpiece The Last Supper, depicted grilled eels, bread and wine on the table.I’ve chosen caviar from the Caspian Sea. Served on blinis.

- 3 oz all purpose flour, sifted
- 3 oz clarified butter
- 2 oz canola oil
- 2 tbsp heavy cream, chilled

Directions:
- Combine all ingredients for the sponge in a bowl and mix together. Cover with plastic wrap and set aside for 1 hour.
