Although we didn’t really get to see exactly what the hobbits had to eat during Bilbo’s 111th birthday, I’m sure I’m not the only one who wished they were there to experience the feast. For my first recipe, I have the classic Madeira cake. Recipes date back to the 18th century and it has the flavor and texture of an pound cake and sponge cake. It’s incredibly easy to make and I imagine this would be a hit with the children at Bilbo’s feast. It’s also portable and will keep fresh for a few days when properly sealed.

Bilbo's 111th Birthday Feast: Madeira Cake
Ingredients
- 226 g 8 oz / 1 cup - unsalted butter, tempered
- 185 g 1 cup - granulated sugar
- juice and zest of 1 medium lemon
- 3 - large eggs room temperature
- 200 g 1 1/2 cups - cake flour, sifted
- 2 tsp - baking powder
- 80 g 3/4 cup - almond flour
- 1 tsp - salt
Instructions
- Preheat your oven to 350F. Lightly grease a 9x9 pan and cut a piece of parchment to fit exactly on the bottom of the pan. This will help unmolding the cake much easier later.
- Add the tempered butter into a mixing bowl with a paddle attachment. Mix until the butter is smooth. Add the granulated sugar and cream together with the butter until combined. Add the lemon zest and the eggs one at a time. Scrape the bowl in between each addition.
- Combine the salt, flours, and baking powder. Add the flours in two to three additions. Mix until combined. Pour the batter into the prepared pan and bake for 40-45 minutes or until golden brown and baked through.
