The second recipe for Jacob Kowalski’s pastry series is makowiec or poppy seed roll. The inspiration for this recipe again came from the book, The Case of Beasts: Explore the Film Wizardry of Fantastic Beasts and Where to Find Them. This was part of the recipe book that Jacob Kowalski inherited from his grandmother. Click on this link to find the first recipe of the series, soft pretzels.
I’ve only had this poppy seed roll once before and the texture surprisingly reminds me of of red bean paste thats often found in asian pastries. I would definitely give it a try if you haven’t before. I particularly love the addition of zest and honey. This recipe also uses A LOT of poppy seeds. I foolishly thought one bottle was enough but soon realized I needed to pop back into the store for more!
Fantastic Beasts and Where to Find Them: Kowalski's Makoweic / Poppy Seed Roll
Ingredients
- | DOUGH |
- 2 tsp - instant yeast
- 2 cups / 10oz / 283g - all purpose flour
- 1/4 cup / 1.5oz / 50g - granulated sugar
- 1/4 tsp - salt
- 1 tbsp - vodka
- 1/2 tsp - vanilla extract
- 1 - egg
- 2 - egg yolks
- 120 ml / 100g - warm milk 110F
- 1.5 oz / 50g - unsalted softened butter
- | FILLING |
- 1 cup / 5.5oz / 330g - poppy seeds
- 1/3 cup - boiling water
- 1/4 cup / 1oz / 28g - almond meal
- zest of one orange
- 2 tbsp - honey
- 1/2 cup / 2oz / 57g - granulated sugar
- 1/2 tsp - vanilla extract
Instructions
- In a stand mixer fitted with a dough hook, add your yeast, flour, sugar, and salt. Mix just enough to combine.
- Combine the vodka, extract, egg, yolks, and milk. Stream the liquids into the dries on medium speed. When it starts to form a ball of dough, add the melted butter.
- Beat on medium speed until it forms a smooth ball of dough.
- Place the dough in a lightly greased bowl, covered, in a warm area for one hour.
- Meanwhile, grind the poppy seeds in a spice grinder until it reaches a mealy texture. Place it into a bowl and cover with the boiling water for 30 minutes.
- Combine all the ingredients for the filling and set aside.
- Place the dough on a lightly floured surface. Roll the dough out into a 10"x12" rectangle. Spread the filling evenly over the dough with an offset spatula. Be sure to leave a 1/2" border.
- Roll the dough from the shorter end. Carefully transfer the roll onto a parchment lined sheet pan with the seam on the bottom. Lightly cover and place it in a warm area for one hour or until proofed and puffy.
- Preheat the oven to 350F. Bake for 30-40 minutes until golden brown.
