I drank my tea in silence. We both looked up when Steph approached with a toast rack full of grilled bread and a plate heaped high with eggs and bacon.
“Mum thought you needed veg,” Seph explained when my eyes widened at the mound of fried mushrooms and tomatoes that accompanied the breakfast. “She said you looked like death.”
“Thank you!” I said. Mary’s critique of my appearance did nothing to diminish the my appreciation for the extra food.
A DISCOVERY OF WITCHES, BY DEBORAH HARKNESS
This dish really doesn’t need a recipe. It’s something I’m sure we’ve all done for breakfast when time allows in the morning. A few weeks ago, I started reading the book, A Discovery of Witches, by Deborah Harkness. It’s been a book I’ve set aside wanting to read but years now but I finally got it to once I realized it was being picked up for a television show on, Sky One. To say I’m obsessed with this book is an understatement and I can’t wait until the show premieres on September 2018.
I was lucky enough to attend San Diego Comic Con again this year and I was so happy to be able to get to the, Discovery of Witches, panel in ballroom 20. The panel was fantastic and so much fun. If you follow me on instagram, you might have already seen some photos and videos from the panel.
A Discovery of Witches: Eggs, Bacon, and Toast
Ingredients
- 2 large whole eggs
- 4 strips thick cut bacon
- 1 pint crimini mushrooms
- 2 medium tomatoes
- salt and pepper as needed
- 2 slices white bread
- 3 tbsp unsalted buttered softened
Instructions
- Heat a cast iron grill pan over medium high heat. Toss the mushrooms in a bit of cooking oil, salt and pepper. Once hot, add the mushrooms and cook for 2 minutes on both sides until golden brown. Do not move the mushrooms too much or it will release too mush liquid. Set aside.
- Slice the tomatoes until thick slices. Season with salt, pepper, and a drizzle a olive oil. Grill for 2 minutes on both side just until tender but still holding it's shape. Set aside.
- Lightly brush butter on both sides of the bread slices. Grill on both sides until lightly golden brown. Set aside.
- On a cold pan, lay the bacon down on the pan and turn the heat onto medium heat. Cook the bacon to desired texture.
- Heat a pan over medium heat. Lightly beat the eggs in a bowl until combined. Add 1 tbsp of butter and once melted, add the eggs. Let the eggs cook in the pan undisturbed for a few seconds. Gently push the eggs towards the center. Continue to do this just until the eggs are cooked. Season with salt and pepper.
