BEAUTY AND THE BEAST
March 17th marks the premiere of the live action movie, Beauty and the Beast starring Emma Watson, Dan Stevens, and Luke Evans. Continuing with the Beauty and the Beast theme, today’s recipe as you probably already know if the grey stuff. This recipe is presented in the style it was first served at the Be Our Guest restaurant in Disney World. It’s quite tasty as is but really great served with cake. I’ll be posting a recipe soon on for The Master’s Cupcake from the menu at the Disney restaurant.
The recipe can be made a few days prior. Just bring the cream back to room temperature and mix it in a stand mixer with a paddle attachment until combined.
Beauty and the Beast: Grey Stuff
Ingredients
- 2 whole eggs
- 1/2 cup granulated sugar (3.5oz / 100g)
- 1 tsp vanilla extract
- pinch salt
- 1/3 - 1/4 cup finely ground Oreo cookies
- 2 sticks unsalted butter, softened (8oz / 226g)
- chocolate pearls optional
Instructions
- In a mixing bowl, whisk together the eggs, sugar, vanilla, and salt. Place the bowl over a double boiler over simmering water.
- Whisk until the sugar dissolves and the mixture reaches 160F. Add the finely ground Oreo crumbs and whisk until the crumbs dissolve and the mixture takes on a grey color. Transfer to a stand mixer fitted with a whisk attachment.
- Whisk on medium speed until the mixture reaches room temperature. Slowly add the soft butter. Mix until the butter well combined.
- Serve the grey stuff with the chocolate pearls as is for a taste or on cake.
