As I’ve said in the previous post, there has been recipes I’ve been hoarding for a while now and I’ve been trying to find ways to use them on this blog. Fortunately, this Victoria Sandwich fits right into this Downton Abbey afternoon tea menu. This recipe for Victoria sandwich comes from English Heritage. If you’re a fan of food and/or English history, you must visit they website and Youtube channel for some amazing videos. To say I’ve been obsessed with their work is an understatement!
There are so many recipes out there for Victoria sandwiches and I honestly assumed this recipe would be quite similar to most of the other ones I’ve tried. I was surprised and really enjoyed that it developed this crispy layer on top on the cake. It’s quite sweet so make sure not to cut each piece too large. Downton Abbey: Victoria Sandwiches
Ingredients
- 675 grams caster sugar
- 6 whole eggs
- 450 grams all purpose flour sifted
- 2 tsp orange flour water
- 1 tsp baking powder
- 90 grams ground almond
- strawberry jam as needed
Instructions
- Preheat the oven to 350F. Butter a 9x13 square baking pan and dust with an even layer of sugar. Tap out any excess sugar and set aside.
- In a bowl, whisk the eggs until frothy. Add the sugar and mix together and well combined. Add the sifted flour and gently mix it into the mixture. Add the ground almond, orange flour water, and baking powder. Mix it all thoroughly together.
- Pour the batter into the prepared pan. Give the pan a few taps on the counter and wrap a wet cloth around the outside of the baking tin. Bake in the oven for 25 minutes or until golden brown.
- Let it cool and cut the cake strips. The size will depend on how big you want your sandwiches to be. I sliced mine into 4 strips. Take one of the strips and slice it in half to make a sandwich. Spread a layer of jam in the middle and layer the top half on top. Slice into rectangles and serve.
