These applecakes mentioned in, The Game of Thrones, was something I put in the back burner for quite a while. I wasn’t quite sure which route I wanted to take. Were these more baked or fried? Filled or topped with apples? Granny Smith apples, Braeburn, or a combination? There were just too many options for me to settle on.
It was finally until I tried a recipe I found a recipe for fine cakes on the Gode Cookery. The recipe produced such a delicious cookie/cake blend that I thought would be amazing with an apple filling. The original recipe is from Gervase Markham, The English Huswife.
I won’t say these are traditional but it is amazing straight out of the oven. The gorgeous apple filling along with the buttery exterior is the perfect complement to your Game of Thrones feast. I hope you enjoy it.
Game of Thrones: Applecakes
Ingredients
- 2 cups unsalted butter, room temp
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/4 tsp ground cinnamon
- 4 cups all purpose flour 18oz / 510g
Filling
- 5 Braeborn apples cored and diced into small pieces
- 2 tbsp unsalted butter
- 1 1/2 tsp ground cinnamon
- pinch freshly ground nutmeg
- 2 tbsp water
- 1/4 cup honey more or less depending on taste
Instructions
- Preheat the oven to 350F.
- In a bowl of a stand mixer fitted with a paddle attachment, beat the butter on medium speed until smooth and creamy. Add the sugar, salt and cinnamon. Mix on medium speed until thoroughly mixed.
- Add the flour a cup at a time on low speed. Mix until a ball of dough forms. Refrierate until needed.
- In a saucepan, melt the butter along with the cinnamon, nutmeg, honey, and water over medium heat. Cook until apples have softened but still holds its shape. Remove from heat and let it cool.
- Take a small handful ball of dough and flatter it out with your hand. Fill the enter with 2 tbsp of apple filling and pinch the eggs together. Gently flatten it out again to make a disc shape and place it on a parchment line sheetpan. Repeat with the rest of the dough.
- Bake for 20 minutes or until golden brown. Serve warm.
