Game of Thrones: Tyrion’s Oatbread
In their hearts, and no doubt some little boys as well. Tyrion listened with half a ear, as he sampled sweetcorn fritters and hot oatbread baked with bits of date, apple, and orange, and gnawed on the rib of wild boar. Thereafter dishes and diversions succeed one another in a staggering profusion, buoyed along upon a flood of wine and ale.
STORM OF SWORDS, A SONG OF ICE AND FIRE
Even though the final season of, Game of Thrones, won’t air until next year, there is already so much buzz around what can possibly happen and who will die. Sadly, the cast and HBO did not show up to San Diego Comic Con this year so we were unable to get any snippet of what is to come. Their attendance for next year is still up in the air depending on when the final season will air. That being said, I’m absolutely not opposed to rewatching the previous seasons!
This recipe for oatbread is not only inspired by the book and television series, Game of Thrones, but also by the wonderful company, Paradise, who asked if I would like to use their candied fruit in my recipes. I was immediately interested because candied fruit peel so difficult to find. I live in San Francisco with so much product and produce at my fingertips but good quality candied fruit and peel was always something I have struggled to find.
The oatbread is described as containing bits of dates, apples, and orange. The combination of the three really is amazing and I ended up using the leftovers for french toast a few days after. In the testing stages of this recipe, I added one large apple to the mix and the resulting product with dense and unappetizing. If you want more apple in the mixture, I would suggest using diced dried apples but I found a medium apple did just fine.
Again, if you’re planning on doing any baking during the upcoming holidays, I can’t suggest ordering candied fruit and peel from Paradise enough. There are tons of Harry Potter, Game of Thrones, and The Lord of the Rings recipes I would have loved to use their candied fruit for. I’m already planning on using their Old English Fruit and Peel mix for Mrs. Weasley’s Christmas cake in December!! Game of Thrones: Oatbread
Ingredients
- 1 cup oats
- 1 1/2 cup water
- 1/4 cup warm water
- 2 tbsp honey
- 1 packet dry yeast 7g
- 3 cups bread flour 13oz / 368g
- 1 tsp salt
- 1/4 cup oats lightly toasted
- 2 tbsp unsalted butter room temperature
- 5 large dried dates seed removed, small diced
- 1 medium apple cored and small diced
- 1 cup candied orange peel
Instructions
- In a sauce pan over medium high heat, bring the 1 1/2 cup of water to a boil. Once it comes to a boil, add the oats and bring it down to a simmer. Cook until oats are cooked through and most of the water has evaporated. Set aside to cool down.
- Mix together the yeast, flour, salt, and toasted oats in a bowl until combined. In a stand mixer fitted with a hook attachment, mix together the oats, honey, and warm water until combined. On medium low speed, add the dries in in two additions. Mix until it forms a ball of dough. Knead for another 5 minutes. Add a bit more flour if you find the dough too wet.
- Add the softened room temperature butter and knead on medium speed until well combined, 5 minutes. Add the diced dates, apple, and orange peel. Mix again until well combined, another 5 minutes.
- Place the dough into a lightly oiled bowl, covered, in a warm area for one hour.
- Tip the dough into a lightly floured surface. Divide the dough into two qual pieces. Roll each dough into a tight ball. Prepare a brotform bowl by generously dusting it with rice flour. Sprinkle on a small handful of oats and place one ball of dough, seam side up, into the brotform. Cover and set aside for 45 minutes. If you do not own a proofing bowl, line a bowl with a kitchen bowl and dust generously with rice flour.
- Preheat the oven to 450F. Place a cast iron pot, with a lid, into the oven to heat up.
- Carefully, remove the hot pot from the oven and tip the dough into the pot. Place the lid back on and return it back into the oven. Bake for 10 minutes and remove the lid. Bake for another 15-20 minutes or until golden brown and it sounds hollow when tapped.
- Allow the bread to cool before slicing and serving.

Hi Heidi, I’m not sure if I’m thinking of the same recipe but no, I did not copy the recipe from the cookbook and not give reference to it. The base recipe came from a loaf we did at a bakery I use to work at. The recipe was then changed and adjusted to the additions that were mentioned in the book.
