Hidden Figures is a Theodore Melfi movie starring, Taraji B. Henson, Octavia Spencer, and Janelle Monae. It was such a great movie that was actually based off the untold story of Katherine G. Johnson who calculated flight trajectories that launched John Glenn into orbit. It’s an incredible story that the entire family should know and love.
There wasn’t much food mentioned in the movie but there a really quick scene with Levi Jr. who kept telling his parents he didn’t want any greens. At the end, his father made him eat his greens anyway and gave him a good helping to collard greens on his plate.
I’ve have collard greens a few times in my life but it’s never really been a regular part of my diet. Thanks to this recipe, I’ve had collard greens twice since making this recipe. It’s honestly so great and I highly, highly suggest making it! Make sure to taste for salt since it might vary depending on the type of bacon and stock you use.
Hidden Figure: Collard Greens
Hidden Figure: Collard Greens inspired by the 2017 Oscar nominated movie, Hidden Figures, starring Taraji B. Henson, Octavia Spencer,and Janelle Monae
Ingredients
- 2 tbsp oil
- 1 small onion small dice
- 2 cloves garlic minced
- 4 slices thick cut bacon medium dice
- 1 bunch collard greens cleaned, stemmed, and chop into 2" pieces
- 2 tbsp apple cider vinegar
- 14 oz chicken stock (1 3/4 cup)
- salt and pepper to taste
Instructions
- Heat the oil in a cast iron pot over medium heat. Add the onion and garlic and cook for 3 minutes until translucent. Add the bacon and cook until golden but not crispy.
- Add the chopped collard greens and apple cider vinegar. Toss to combine. Add the stock and bring the greens to a simmer. Cook for 45 minutes to an hour until the greens get very soft. Season for salt and pepper.
