Manchester By The Sea: Carbonara
Manchester By The Sea: Carbonara inspired by the Oscar nominated movie, Manchester by the Sea, starring Casey Affleck, Michelle Williams, and Kyle Chandler.
Ingredients
- 6 oz spaghetti pasta
- 4 slices thick cut bacon medium dice
- 2 tbsp olive oil
- 1 clove garlic minced
- 2 whole large eggs
- 1/2 cup grated parmesan cheese 25g
- salt and pepper as needed
Instructions
- Bring a pot of water to a boil over high heat with a generous pinch of salt. When it comes to a boil, add your pasta and stir occasionally to prevent it from sticking.
- Meanwhile, heat a pan over medium heat with the olive oil. Add the bacon and garlic. Cook until the bacon is just golden but not crispy. In a separate bowl, whisk together the eggs and cheese. Season with salt and pepper.
- When the pasta is ready, transfer the pasta to the pan with the bacon and garlic. Toss to combine. Reserve 1/2 cup of the pasta water. At this point the pan should be off the heat. Once it cools just down a bit, add the egg and cheese mixture and toss to combine. Add a few tablespoons of the reserved pasta water to help thin it down. Season with salt and pepper and garnish with some more grated parmesan.
