Winnie the Pooh: Gopher’s Salmon Salad
I’ve had so many talks with my friends recently regarding their feelings about mayonnaise. I really love it because I grew up with my grandmother putting it into my sandwiches. It was only recently that I realized mayonnaise isn’t as popular as I thought it was! What are you feelings about mayonnaise? Do you prefer butter more?
These thoughts swimming through my head when I was making this salmon salad. Who doesn’t love mayonnaise? This dish went from plain old cooked salmon to this incredible mixture after mixing in the mayonnaise. I love it on it’s own or with cracker or toast. Make sure not to leave out the diced cucumbers and bell peppers because they really add a bite of freshness this dish really needed. Please enjoy!

GOPHER: Yeah, let’s see here… summer squash, salmon salad, succotash, spiced custard, and honey.

Winnie the Pooh: Gopher's Salmon Salad
Ingredients
- 2 cups cooked salmon
- 1/2 cup mayonnaise
- 1 medium red bell pepper small dice
- 1 medium cucumber small dice
- 1/2 tsp chili flakes or to taste
- 1/2 tsp dried dill
- 1/2 medium yellow onion small dice
- salt and pepper to taste
- 2 tbsp lemon juice
Instructions
- In a bowl, gently toss all the ingredients together. Season with salt and pepper to taste. Chill before serving.
