One of the most memorable scenes I remember from watching Winnie the Pooh as a child was when Pooh got himself stuck in Rabbit’s door. A few drops of honey wasn’t enough for the poor bear and he instead ate so much that he was unable to fit through Rabbit’s door. One night, Gopher appears from the ground was a meal of summer squash, succotash, salmon salad, spiced custard, and honey. Pooh’s eyes widen ate the mention of honey has Gopher pulls out a pot of honey from his lunch box.
I wanted to keep this recipe for summer squash really simple since Gopher literally pulled out a yellow summer squash from his lunch box in the scene. I love roasted squash. This is lightly season with salt and pepper and some chili flakes and garlic pepper. It’s a wonderfully light and easy side dish to add to any meal. Please enjoy.
GOPHER: Time for my midnight snack. Say, ain’t you that stuck up bear… I still think I can blast you out of there.
POOH: Um, what sort of lunch is in that lunch box.
GOPHER: Yeah, let’s see here… summer squash, salmon salad, succotash, spiced custard, and honey.

Winnie the Pooh: Gopher's Summer Squash
Ingredients
- 1 large zucchini sliced into 1/4" discs
- 1 large yellow squash sliced into 1/4"discs
- 2 tbsp olive oil
- 1/2 tsp coarse sea salt
- 1/4 tsp ground black pepper
- 1/4 tsp red chili flakes or to taste
- 1/2 tsp garlic powder
Instructions
- Preheat the oven to 375F.
- In a bowl, toss the sliced zucchini and squash with the oil, salt, chili flakes, and garlic powder until combined. Arrange them on a small baking dish. Roast for 15-20 minutes until the edges are golden and cooked through.
