When looking for inspiration for food from Middle-Earth, I quite often turn to the many art and design books from Weta that go into detail about things that we barely got to see on film. In “The Hobbit: The Desolation of Smaug Official Movie Guide”, food stylist, Deborah Logan, talked about the food she created for Hobbiton and these toffee apples are one of the many items she mentioned. Not only are these toffee apples appropriate for Bilbo’s birthday feast but also for the upcoming fall season.

Bilbo's 111th Birthday Feast: Toffee Apples
Ingredients
- 4 - granny smith apples
- 300 g 1 1/2 cups - granulated sugar
- 100 ml - water
- 1 tsp - vinegar
- 60 g - golden syrup
- sticks
Instructions
- Thoroughly clean and dry each of the apples. Push the sticks into center of each apple. Prepare a sheet pan lined with a sheet of parchment and set aside.
- Combine the sugar, water, vinegar, and golden syrup in a heavy bottom pot. Place over medium high heat. Heat the sugar to 300F-310F.
- Once it hits the hard crack stage, take the pot off the heat and immediately dip each apple into the sugar. Twirl each apple in the sugar until you have a nice coating. Allow the excess sugar to drip off and let it cool the prepared sheet pan. Let it cool and harden before eating.
