I feel like I’ve been waiting for this movie for years and I’m so happy it’s finally here! I watched Captain America: Civil War on IMAX and like all the other Marvel movies released before, it was fantastic. One of my favorite scenes was the introduction of Spiderman. This recipe for walnut and date loaf is inspired by that scene with Aunt May and Tony Stark chatting over a prize Peter has supposedly won. It was such a funny and memorable scene that I knew immediately I had to recreate the loaf. Let me know if you’ve seen the movie! I would love to hear what you thought of it.
Captain America: Civil War - Aunt May's Walnut and Date Loaf
A recipe for Aunt May's walnut and date loaf inspired by the movie, Captain American: Civil War, starring Robert Downey Jr. and Chris Evans.
Ingredients
- 1/2 cup / 3.8oz / 110g - unsalted butter room temp
- 1/2 cup / 3.35oz / 100g - granulated sugar
- 1 tsp - salt
- 2 - eggs large, room temperature
- 2 cups / 9oz / 250g - all purpose flour sifted
- 1/4 cup / 1/5oz / 40g - almond flour
- 2 tsp - baking powder
- 1 1/2 tsp - baking soda
- 1 cup - plain yogurt
- 1 tsp - vanilla extract
- 1/2 cup -walnuts roughly chopped
- 4 - medjool dates seed removed, medium dice
Instructions
- Preheat the oven to 350F. Lightly grease a loaf pan with butter or two paper loaf molds.
- In a stand mixer fitted with a paddle attachment, cream together the butter and sugar until combined. Add the salt and add one egg and a time on medium speed.
- Combine the flours, baking powder, and baking soda. Alternate adding the dries with the yogurt until combine.
- Finally, fold in the chopped walnuts and dates. Scoop the batter into your mold or pan and bake for 40 minutes or until golden brown and cooked through.
