It has been some time, hasn’t it?! As you can probably tell, I took some time off the blog because I have been traveling! I’ve traveled to Japan, Hong Kong, Macau, China, and Myanmar. I’ve got so many stories and photos to share but before that, I want to jump right into the recipes I have coming up. There are been so many movies I wanted to watch and thankfully, I was able to use some of the long hours on the flight for that.
It’s award season and The Academy Awards is creeping up quickly! This first recipe I’m posting is for Disney Pixar’s Coco. The movie is nominated for best animated feature film and best original song. These churros come from the first half of the movie when Miguel is first transported to the Land of the Dead. I am in love with this story and the movie is visually stunning. I can’t highly recommend this movie enough. The recipe comes from Rick Bayless and you can’t find the original recipe here. Although the dough can be made in advance, the churros are best fried just before serving. Please enjoy!
Disney Pixar's Coco: Churros
Ingredients
- 2 tbsp vegetable oil
- 1 cup water
- 1 tbsp granulated sugar
- 1 cup all purpose flour 4 1/2 oz
- 2/3 cup granulated sugar
- 1 tsp ground mexican cinnamon
- vegetable oil, for frying as needed
Instructions
- Heat the oil, water, and 1 tbsp of sugar in a saucepan over medium heat. Once it comes to a boil, take it off the heat and stir in the all purpose flour. Stir vigorously to combine. Set aside, with the lid, to cool down.
- On a plate, combine the second amount of sugar and cinnamon. Mix to combine and set aside.
- Heat the oil to 375F. Fill a pipping bag, fitted with a large star tip, with the dough mixture. Carefully pipe the dough into the hot oil into 5" long pieces. Fry until golden brown. Immediately place it into the sugar mixture to coat. Serve immediately.
