Like The Unexpected Party from the Hobbit, I really want to recreate the scene when Harry sits down in the Great Hall and amazing food suddenly appears on the table before his eyes. It’s every food lovers dream and in due time, I hope to recreate the feast for you guys on this blog. The only way I feel I can attack this beast is by taking it one item at a time and to start it off, I have the Hogwarts rice pudding.
When everyone had eaten as much as they could, the remains of the food faded from the plates, leaving them sparkling clean as before. A moment later the desserts appeared. Blocks of ice cream in every flavour you could think of, apple pies, treacle tarts, chocolate eclairs and jam doughnuts, trifle, strawberries, jelly, rice pudding…
Rice pudding is always a fantastic dessert because gluten free and very easy to make. I want to be perfectly honest and say that I practically ate this throughout the entire day. Mind you, this is a recipe for four. I couldn’t get enough. It was just sweet enough and it was so creamy. Top this off with some fresh fruit and nuts and you’re good to go!
Harry Potter: Hogwarts Rice Pudding
Ingredients
- 3/4 cup jasmine rice
- 2 1/2 cups milk
- 1/4 cup heavy cream
- 1/4 cup light brown sugar packed
- 1 tsp vanilla extract
- pinch of salt
- 2 cinnamon sticks or 2 tsp ground cinnamon
- optional: raisins
Instructions
- Combine all ingredients in a medium saucepan. Place on medium high heat and bring to a simmer. Bring the heat down to medium low and cover. Let this simmer for 15-20 minutes. Stir a bit to ensure that it is not burning on the bottom.
- Taste to see if the rice is tender before taking it off the heat. Serve with some fresh fruit and nuts.
