First week I was here, I asked one of the stewards if I could have some boiled peanuts. I used to eat them all the time as a kid, and I’ll be damned if there hasn’t been a full bowl of peanuts here every day since.

I remember my parents use to eat a lot of boiled peanuts as a child. I remember thinking it had a really strange texture that only my parents could conjure up themselves until I learned it was a popular snack in the south. Most of the recipes online call for a lot of salt for boiled peanuts but I find it way too salty. My recipe uses one heaping tbsp but feel free to use more if you prefer. The star anise is optional but it adds a different flavor which I really like.
House of Cards: Boiled Peanuts
Ingredients
- 2 pounds - raw peanuts in shell
- 1 heaping tbsp - salt or more if your prefer
- 3 pieces - star anise
- water as needed
Instructions
- Wash the peanuts and soak it in water for one hour. Drain the water and transfer the peanuts to a large pot.
- Add the salt and star anise Cover with water and bring to a boil then turn it down to a simmer.
- The cooking time will be dependent on your peanuts but mine were done after an hour and a half. Taste test the peanuts. It should be soft like a bean.
