My one guilty pleasure is a good racks of ribs. Even at 7:30 in the morning. I have the whole place to myself. Freddy opens up just for me…
Where I grew up in South Carolina nobody had two pennies to rub together. A rack of ribs was a luxury, like Christmas in July. I’ve had a weakness for them ever since.
FRANCIS, HOUSE OF CARDS
The most memorable scene from the House of Cards series is at Freddy’s BBQ Joint. In an interview, the set dresser mentioned the conversation when deciding what kind of ribs it should be. His opinion was that North Carolina had the best barbecue and that’s how it got started.
In this recipe, I have a dry rub and a sauce that is generously slathered at the end and served on the side. These ribs take quite some time to make but it’s so worth it!
