This recipe for apple pie is inspired by the AMAZING HBO show, The Leftovers. October 14 marks the day of the sudden departure when 2% of the world’s population disappeared. If you haven’t yet seen this show, you really have to give it a try. The show stars Justin Theroux, Carrie Coon, and Ann Dowd. While I’m familiar with Ann Dowd’s work, it was my first time really watching Justin Theroux and Carrie Coon and I have to say their performance was incredible. Let me know in the comments if any of you guys are fans of the show! I know the series is quite popular but I actually don’t know anyone else that watches it!
This is a classic recipe for apple pie that would be perfect for the holidays coming up very soon. I love the addition of sugar on the top crust because it gets so nice and crispy when it bakes in the oven! Please enjoy!
The Leftovers: Apple Pie
Ingredients
Double Pie Crust
- 2 cups all purpose flour 9oz / 255g
- 1 tsp salt
- 10 tbsp cold unsalted butter, sliced 5oz / 142g
- 1/2 cup ice cold water 4oz / 113g
- 1 large egg, lightly whisked for egg wash
- 2 tbsp raw sugar
Filling
- 6 large granny smith apples quartered, cored, and thinly sliced
- 1/2 cup granulated sugar 3.5oz / 100g
- 1 tsp cinnamon
- pinch freshly grated nutmeg
- pinch salt
- juice half a lemon
Instructions
Pie Dough
- To prepare the crust, mix the flour and salt together in a stand mixer bowl fitted with a paddle attachment. Add the sliced cold butter and mix on medium speed until the butter breaks down to the size of hazelnut size pieces. Stream in the cold water just until the dough comes together when pressed.
- Press the dough together and divide it into two pieces. Wrap with plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 425F. Lightly grease a pie pan and set aside.
- On a lightly floured surface, roll the pie dough into a 12" circle. Gently press the dough into the pie pan. Refrigerate until needed. Roll out the second piece of pie dough and place it on a piece of parchment. Refrigerate until needed.
Filling
- In a bowl, combine the apples, sugar, cinnamon, nutmeg, salt and lemon juice. Toss to combine. Pour the apple mixture into the pie pan. Place the second pie dough on top and crimp the edges together. Cut four slits in the center for ventilation.
- Brush the top of the pie with the lightly whisked egg. Sprinkle on the raw sugar and bake for 40 minutes or until golden brown.
