I’m sending you some Australian chocolate, a pompom I made and a cake called a lamington, which I was meant to eat for lunch.
MARY AND MAX, 2009
I first heard of lamingtons when I was in culinary school. A classmate who recently moved from Australia made a batch of laminagtons for the class and I remember thinking it was such a cute little dessert that makes great use of leftover cake. I used the leftover cake from the Room birthday cake but you can really use whatever you want.
I know most recipes use desiccated coconut but I personally really like the shredded coconut because it adds more flavor than the desiccated version does.
Mary and Max: Lamingtons
A recipe for lamingtons inspired by movie, Mary and Max.
Ingredients
- CAKE:
- 3 - egg yolks large
- 3 oz / 85g - milk
- ½ tsp - vanilla extract
- 3.5 oz / 100g - all purpose flour
- 3,5 oz / 100g - granulated sugar
- 1 tsp - baking powder
- ½ tsp - salt
- 3.5 oz / 100g - unsalted butter softened
- GLAZE:
- 4 cups - powdered sugar
- 1/4 cup - cocoa powder
- 1/2 cup - hot water
- 2 tbsp - unsalted butter soft
- shredded or desiccated coconut as needed
Instructions
- Preheat your oven to 350F and grease a 6" square pan.
- In a bowl, mix together the egg yolks, milk, and vanilla extract.
- In a mixing bowl, sift together the flour, sugar, baking powder, and salt. Mix until combined.
- Add the unsalted butter and mix on low speed until the flour is hydrated.
- Slowly stream in the yolk mixture until combined. Scrape the bottom of the bowl to make sure all the ingredients are well combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until cooked through.
- Cut the cake into cubes, the size really depends on how big you want them to be!
- Prepare the glaze by combining all the ingredients and mixing until smooth. Place cake on a fork and spoon the glaze over the cake,
- Tap off the excess and cover with the coconut. Let it dry on a sheet rack and continue with the rest of the pieces.
