You have my apologies if the Potatoes and Molasses song is now stuck in your head. It is quite catchy and upbeat, you have to give them that! Potatoes and molasses has been something I’ve been really curious about since watching Over the Garden Wall and to be honest, I was not a big fan of the combination. It wasn’t terrible but it wasn’t great either. I decided to switch the mashed russet potato for a sweet potato and I loved the combination. This definitely tasted like something that belonged on a Thanksgiving table but also something I can enjoy all year long. You can obviously substitute any kind of sweet potato you want. I decided to go with the white sweet potato is keep with the image from the show.
Over the Garden Wall: Potatoes and Molasses
yield: 2 prep time: 5 minutes total time: 30 minutes
ingredients:
- 1 large O’henry sweet potato, approx. 12-14 oz
- 2 tbsp unsalted butter
- 3 tbsp cream
- salt and pepper to taste
- pinch of cinnamon
- pinch of nutmeg
- 2 tbsp unsulphured molasses
directions:
- Clean and peel the sweet potato. Slice it into 1-2 ” disks and place it into a large pot of cold water. Place the pot on medium high heat and cook until a fork easily penetrates the sweet potato. Drain and let cool slightly. Place the potatoes back into the warm pot and mash with a potato masher or simply with a fork. Add your butter and cream. Add the cinnamon and nutmeg and season with salt and pepper. Drizzle with a bit of molasses to taste.
