Pirates of the Caribbean feast
During the 17th century, pirates used Port Royal in southwestern Jamaica as their main base. It is only appropriate that the Jamaican culinary influences have made it’s way on board the ships. Rice and peas is a staple Jamaican dish that consists of rice, beans, and coconut. I’ve never really tasted an authentic version of rice and peas but I really hope this comes close. I love how the rice fluffy the rice gets and how it completely absorbs all the coconut milk and spices. Enjoy!

Pirates of the Caribbean: Rice and Peas
Ingredients
- 1 cup - long grain rice cleaned
- 15 oz - kidney beans cooked and drained
- 12 oz - water
- 4 oz - coconut milk
- 2 - garlic cloves smashed
- 3 - sprigs fresh thyme
- 3 - green onion stems thinly sliced
- large pinch of salt
- 1/2 tsp - freshly grated ginger
- 1 tbsp - unsalted butter
Instructions
- Add the water, coconut milk, garlic, thyme, onion, salt, ginger, and beans in a pot. Bring to a simmer. Add the rice and bring to a boil. Bring the heat back down to a simmer and cook until most of the water has been absorbed.
- Remove the thyme stems and large pieces of garlic before serving.
