ROMA, SCREENPLAY, ALFONSO CUARON
Roma is nominated for a total of ten Oscar nominations for this year’s Academy Awards. The movie was so beautifully shot in black and white and the star at the center of it all, Yalitza Aparicio, was incredible! If you haven’t seen the movie yet, you can stream it on Netflix… so don’t delay!
This recipe for tortas is inspired by a scene in the movie when Cleo and Adela go out to eat. The interesting part was that Netflix translated it to tortitas instead of torta. After some research, I found out that they were instead eating tortas. There are a few interpretations for tortas but I found this was the most classic.
The bread can typically be found in any Mexican market but if you’re interested in making your own, I really love this recipe from King Arther Flour. If you’re throwing an Oscar viewing party, I think it would be particularly amazing if you made mini versions of these. It’s super easy and will definitely be a hit! Please enjoy!
Roma: Pork Torta
Ingredients
- 2 telera rolls
- 2 center cut boneless pork loin 1/4" thick
- 1 whole egg whisked
- 3/4 cup all purpose flour
- 1/4 cup vegetable oil
- 1 small yellow onion 1/4 slices
- 1/4 cups refried beans
- 2 roma tomatoes 1/4" sliced
- 1 avocado sliced
- 1/4 cup crumbled cotija cheese
- sour cream/ crema optional
Instructions
- Heat a cast iron pan over medium high heat. Add about 1/4" cup vegetable oil to the pan to heat up. Meanwhile, salt and pepper the pork and dip it into the egg and then into the flour to lightly coat. Repeat these steps for the second piece of pork.
- Once the pan is hot, carefully lay the pork into the pie and fry on both sides until golden brown and cooked through. Set aside to rest while you prepare the rest of the sandwich.
- Lightly salt you sliced yellow onions. Toss to combine and set aside.
- Slice your bread in half and lightly toast. Spread a layer of refried beans on one side of the bread. Top with your pork, tomatoes, onions, sliced avocados, and crumbled cheese. Top it all of with a drizzle of sour cream or mexican crema and the top of the bread.

Roma was one of my favorite films of 2018, and the Oscars series you are doing is so creative. I will definitely try this recipe, it looks delicious.
