This has got to be one of my favorite dishes. Not only is it delicious but it’s so easy to whip together. It’s messy and your face will most likely be covered with cheese afterwards but it’s so damn worth it. The two hour finale of Sense8 airs tomorrow on Netflix and if you haven’t planned anything yet, I can’t imagine anything easier and faster than this recipe.
If you don’t have a grill on hand, I like to steam the corn until cooked through and then I would proceed with the toppings. It’s still as delicious! Please enjoy.

Sense8: Lito's Elotes
Ingredients
- 2 ears fresh corn husked
- 1/4 cup mayonnaise or mexican crema
- 1/2 cup cotija cheese
- chili powder as needed
- lime juice as needed
Instructions
- Heat a grill on medium high heat. Add the shucked corn and grill on all sides until the corn is cooked through and slightly blistered.
- Remove the corn from the grill and spread on the mayonnaise or Mexican crema. Roll the corn in the cotija cheese and sprinkle on the chili powder and lime juice. Serve immediately.
