This is my mother’s special omelet. She would cook this for my father whenever he was missing Spain.
LITO, SENSE8, SEASON TWO, EPISODE: ISOLATED ABOVE, CONNECTED BELOW
I’ve got an amazing Spanish omelet for you today inspired by Lito’s in the Netflix series, Sense8. While Lito never mentioned what kind of omelet it was, we were able to see a glimpse of it in the episode. What confused me was that it looked like there were berries on top of the omelet but when he sliced it, it looked exactly like Spanish tortilla.
A Spanish tortilla has to be one of my favorite guilty pleasures. The recipe begins with frying potatoes and onions in oil and then cooking it in a eggs. It’s an incredible dish you must try if you have never. Remember to save the oil you fried the potatoes in! I hope you love the recipe, please enjoy.
Sense8: Lito's Special Omelet
Ingredients
- 1/2 cup olive oil
- 1 medium white onion small dice
- 2 large russet potatoes scrubbed clean and peeled, diced into 1" pieces
- 5 large whole eggs
- salt and pepper to taste
Instructions
- Heat a large frying pan (about 9 inches) over high heat. Add the oil and once hot, add the onions and potatoes. Fry until the potatoes are tender and crispy.
- Drain the potatoes of the oil and place it in a bowl. Add the eggs and gently stir together. Meanwhile, heat the pan over medium low heat. Pour the egg and potato into the pan and season with salt and pepper.
- With a spatula, gently move the potatoes around. Once the eggs start to set, stop stirring and allow it to cook. When the eggs on top have start to set, very carefully turn the omelet over onto a large plate. Slide the omelet back onto the hot pan. Cook for another minute until cooked through. Serve immediately.
