SNOW WHITE AND THE SEVEN DWARFS
Happy Sunday! This week has seriously gone by in a blur. If you remember my last post, I mentioned that I submitted my hotel request for San Diego Comic Con. Well, it’s not good news. I’ve been placed on a waiting list hoping a room will open up. I love SDCC but it’s getting so stressful every year not knowing whether or not you’re able to get a hotel room or not!
For today’s recipe, I have a potato and sausage soup inspired by the movie Snow White and the Seven Dwarfs. Soup was mentioned in the movie but we were never told what exactly it was. So, I decided to come up with a German inspired soup that would fill the stomachs of seven dwarfs after a long day of work. This soup is incredibly simple, filling, and delicious. Perfect for a cold day at home! Please enjoy.
Snow White and the Seven Dwarfs: Potato and Sausage Soup
Ingredients
- 1/2 yellow medium onion 1/4" diced
- 3 strips - bacon medium dice
- 2 - cloves garlic minced
- 2 - stalks of celery 1/2" diced
- 2 - medium carrots 1/2" diced
- 3 or 24oz - medium russet potatoes cleaned and peeled, 1" dice
- 3 cups - chicken stock
- 1 - bay leaf
- 1/4 cup - sour cream or heavy cream
- chopped fresh parsley to garnish, as needed
- 2-3 - german sausages sliced on a bias.
- salt and pepper to taste
Instructions
- In a pot over medium heat, add the diced onion and bacon. Cook for 5-6 minutes until the onions are soft. Add the garlic and cook for another minute until fragrant.
- Add the chopped celery, carrot, and potatoes. Add the bay leaf and pour in the chicken stock. Bring the mixture to a boil and then turn it down to let it simmer. Let it cook until the soup thickens and the potatoes are tender but still holding their shape.
- Meanwhile, brown the sausages on a skillet until golden. Season the soup for salt and pepper. Stir in the sour cream of heavy cream right before serving. Top with sausages and chopped herbs.
