The Fault in Our Stars: Sweet Pea Sorbet
A recipe for sweet pea sorbet from the movie and book, The Fault in Our Stars by John Green.
Ingredients
- 4.5 oz / 127g / 1 cup - fresh sweet peas
- 4 - mint leaves
- 2 oz / 56g / 1/4 cup- simple syrup equal parts water and sugar brought to a boil
- 2 cups - water
Instructions
- Bring a pot of water to a boil over high heat. Blanch the peas and mint for 30 seconds and immediately transfer to an ice bath.
- Strain and transfer to a high powered blender with the water. Blend and add the simple syrup to taste.
- Strain and churn in an ice cream machine. Follow the machine's instructions.
