With any feast or party you’re planning to throw, it’s always best to have a few dishes that you can make ahead where you don’t have to worry about reheating or timing it just right. With this starter, you can create the mixer way ahead of time and set it out for guests to enjoy. It’s easy to underestimate how satisfying and tasty endive bites can be and I’m surprised I don’t see it at parties more often. You can really substitute any of the ingredients but I always like to check for crunch, acid, and sweetness. I can easily imagine the elves serving this to their guests. It’s light and refreshing.

The Hobbit: Elrond's Feast - Endive with Feta and Pear
Ingredients
- 3 - heads of endive cleaned and dried
- 1/3 cup - hazelnuts toasted and roughly chopped
- 1 - medium pear 1/4" diced
- 1/4 cup - raisins
- 1/2 cup - feta cheese crumbled
- salt and pepper to taste
- 2 tsp - lemon juice
- 1 tbsp - olive oil
- honey as needed
Instructions
- In a bowl, combine the hazelnuts, diced pear, raisins, lemon juice, olive oil, and feta cheese.
- Toss to combine and season with salt and pepper to taste.
- Spoon the mixture into each endive leaf. Drizzle honey over the endive and enjoy!
