I love the combination of pistachio and rose and when I saw that they actually had small cakes served during Elrond’s feast, I knew I had to make this cake. The rose in this cake is not very strong so for those that are unsure about the flavor then this is a good cake to try first.

The Hobbit: Elrond's Feast - Pistachio and Rose Water Cake
Ingredients
- 155 g unsalted butter room temp
- 90 g pistachio meal
- 65 g almond meal
- 190 g granulated sugar
- 3 eggs
- 72 g all purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 2 tsp rose water
Instructions
- Preheat the oven to 350F.
- In a mixing bowl, cream together butter and granulated sugar for 5 minutes. Add eggs and incorporate.
- Add the rose water, pistachio, and almond meal and mix to combine.
- Add the sifted flour, salt, and baking powder. Fold in just until incorporated. Transfer the batter into a greased 8x8 baking pan.
- Bake for 20-30 minutes until golden and cooked through.
