THE SHAPE OF WATER, 2017
One of my favorite films nominated is, The Shape of Water, directed by Guillermo del Toro and staring Sally Hawkins. Thankfully, there are a few great food scenes in this movie that I couldn’t wait to tackle in the kitchen to share with you guys. This key lime pie comes from the beginning of the film when Giles and Elisa visits Dixie Doug’s Pies. They take two slices of key lime pie home and what we see are two incredibly bright green slices of pies. It honestly doesn’t look very appetizing but it makes for such a memorable scene.
This pie is incredibly easy to make and best of all, you can make it in advance. Just remember that the pie needs to be refrigerated for 3 hours before serving to help set the filling. Place the whipped cream on top before serving. Also, if you don’t have access to fresh key limes, just use regular lime juice. It’s much better than use the bottled key lime juice.I hope you enjoy this recipe as much as did!
The Shape of Water: Key Lime Pie
Ingredients
Crust
- 1 package graham crackers 9oz / 255g
- 1/2 tsp salt
- 5 tbsp unsalted butter melted
Filling
- 1/2 cup freshly squeezed key lime juice 4oz / 113g
- 1 can sweetened condensed milk 14oz / 396g
- 4 large egg yolks
- zest of 2 key limes
- 2 drops green gel food coloring
Topping
- 1/2 cup cold heavy cream
- 1 tbsp granulated sugar
Instructions
- Lightly grease a 9" pie pan and set aside. Preheat the oven to 325F.
- In a stand mixer, crush the graham crackers until it resembles fine sand. Add the salt and melted butter. Mix until well combined. Pour the mixture into the pie pan. Use a cup measure to help evenly press the graham crackers into the pie pan. Bake the crust for 8 minutes until very fragrant and a slightly darker golden brown.
- Meanwhile, combine all the ingredients for the filling in a bowl. Mix until well combined. Pour the filling into the prebaked pie shell. Bake for another 10-15 minutes at 325F until just set.
- Let it cool for 30 minutes and then refrigerate it for 3 hours. Before serving, place the heavy cream in a stand mixer fitted with a whisk attachment. Whisk on medium speed until bubbles start to form on top. Add the sugar and whisk until you get medium stiff peaks. Pipe a design around the pie or simply spread it on top to cover.

I was wondering why Giles would order the pie and not eat it when I saw all those pies in his fridge! I did find a recipe for key lime pie that uses the Keebler graham cracker crust and it’s good! I put lime slices on mine and ate one of the limes but I spit it out.
