Eastman, The Walking Dead, Season 6
What better way to celebrate Valentine’s Day than to celebrate the midseason premiere of The Walking Dead! They left us off with an incredibly intense scene when Alexandria is overrun with walkers and Rick and his group is making their way out of the house covered in walker guts. What made the scene so much worse was that Sam starts calling for his mother… in the middle of a hoard of walkers. Insert an image of my head banging against the wall. That being said I can’t wait for The Walking Dead to come back!
For today’s recipe, I have Morgan’s falafels made by Eastman in the Here’s Not Here episode. Morgan stumbles upon a cabin and attempts to kill the owner. Unbeknownst to Morgan, Eastman, already had an eye on him and knocks him out and locks him up in his jail cell. During his stay, Eastman offers Morgan falafels and many other kinds of food he has grown in his garden. For this recipe, make sure to use dried chickpeas. The canned version will not work. I’ve tried more times than I care to admit.
The Walking Dead: Morgan's Falafels
Ingredients
- 1 1/2 cup - dried chickpeas soaked overnight
- 4.5 oz / 130g / 1 cup - chopped onions medium dice
- 2 - cloves garlic rough chop
- 3 tbsp - all purpose flour
- 2 tsp - lemon juice
- 1 tsp - salt
- 2 tsp - cumin
- 1/4 tsp - cayenne
- 1/4 tsp - ground black pepper
- 1 oz / 28g / 3/4 cup - chopped parsley
- canola oil to fry
Instructions
- Soak the dried chickpeas in 4-5 inches of water overnight.
- Drain the chickpeas and pat dry with a kitchen towel. Place all of the ingredients in food processor and pulse until it forms a mealy paste. It should keep together easily when pressed together.
- Place the mixture into a bowl and cover with plastic wrap. Refrigerate for 30 minutes.
- Heat canola oil over medium heat. Falafels are usually deep fried but you can keep this healthy by pan frying it or baking it.
- Form the mixture into balls with your hands or with a scoop. Fry until golden brown. Drain on paper towels and serve!
