This Is Us: Jack’s Banana Pudding Ice Cream
I don’t know about you but as much as I love the show, This Is Us, it feels like the next season is really going to be a tear jerker. This recipe for banana pudding ice cream comes from the last episode of the latest season, The Wedding. Right before the wedding, Kate visits the ice cream shop she use to visit with her dad. She comes to see that the ice cream shop has changed slightly and no longer carries his favorite flavor, banana pudding ice cream.
KATE: Any chance you guys are still making that banana pudding flavor?
EMPLOYEE: No. I’m sorry.
KATE: It was my dad’s favorite. I was gonna buy it today to serve with the cake at my wedding. Not exactly something old, but an old tradition.

The scene was so sad and yet quite sweet. The shop employee offers Kate a few other flavors like coconut and banana or lavender balsamic bur Kate sadly declines. I’ve never had banana pudding ice cream before but with just the sound of it, I know it’s going to be good. Be sure to use ripe bananas so the flavor really comes through. Please enjoy!
This Is Us: Jack's Banana Pudding Ice Cream
Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- pinch salt
- 6 large egg yolks
- 2 tsp vanilla extract
- 2 ripe bananas very finely mashed
- 2 cup Nilla cookies roughly crushed
Instructions
- Combine the cream and milk in a saucepan. Place it over medium heat until it starts to simmer and add the mashed bananas.
- Meanwhile, whisk together the sugar, pinch of salt, yolks, and vanilla extract. When the milk mixture comes to a simmer, temper the yolks by slowly streaming and whisking the hot mixture into the yolks. Return the mixture back to the saucepan over medium heat. Stir constantly until it reaches 170F.
- Remove the pan from the heat and you can either cool in an ice bath or in the refrigerator. Make sure to cover the mixture with plastic wrap.
- Freeze your ice cream machine according to factory directions. Churn your ice cream base until it reaches the consistency of soft serve. Fold in the crushed Nilla crackers and freeze until firm.
