The weather in California has been amazing ever since the start of November. The sun is still shining but there has been a crispness in the air that only means holidays are coming! While I’m so excited that it’s November, it’s also crunch time to figure out what I’m doing for the holidays.
At this point of the month, I’m sure almost everyone is trying to figure out what on earth they should make for Thanksgiving or Christmas dinner. It’s got to be easy and it’s got to be portable. These pigs in a blanket with nut cheese fits the bill. This is especially great to make for any, This Is Us, fans you have in your circle of friends or family. The scene comes from the second season of the series in a hilarious moment between Toby and Kate. Toby prepares a plate of pigs in a blanket and nut cheese for Miguel in preparation for their arrival.
These pigs in a blanket reheat well and and the nut cheese can be made in advance. I purchased the mini sausages from Whole Foods but just use what you can find and cut the sausages into the sizes your prefer. As for the nut cheese, please note that the cashews need to be soak prior to making the recipe. Please enjoy!
This Is Us: Pigs in a Blanket with Nut Cheese
Ingredients
Pigs in a Blanket
- 14 oz mini sausages
- 1 sheet puff pastry
- 1 whole egg lightly whisked
Nut Cheese
- 1 cup raw cashews 5oz / 142g
- 1 clove garlic
- 1/4 cup nutritional yeast
- 1/4 tsp salt 1
- 2 tbsp olive oil
- juice and zest of half a lemon
- 1/4 cup water
Instructions
Pigs in a Blanket
- Prepare starting the recipe, soak the cashews in water for 12 hours or overnight in the refrigerator.
- Preheat the oven to 400F. Prepare a baking sheet lined with parchment or silpat and set aside.
- Roll out the puff pastry on a lightly floured until it reaches approximately, 11x14. Cut out 1" strips (more or less depending on the size of your sausages). Cut the strip into thirds and roll each piece around a sausage. Pinch the seam to seal it together. Place it on the baking sheet, seam side down.
- After all the sausages have been wrapped, brush with the lightly whisked egg and bake for 10-15 minutes until golden brown.
Nut Cheese
- Drain the water that the cashews have been soaking in. In a food processor, combine all ingredients, except for the water, and pulse to combine. Add the water a bit at at time until you get a dippable consistency. Taste for salt and pepper.
