Well, I didn’t make it to be a TV hood ornament. That right there is the healthiest poppy seed muffin you will ever eat. I made it with whole wheat, unsweetened almond milk, and grape seed oil. It’s so healthy, in fact, it hardly qualifies as a muffin.

THIS IS US: HEALTHIEST POPPY SEED MUFFIN RECIPE
It’s such a terrible time to start thinking about healthy options when the holidays are coming up and all you want are the delicious things! This recipe for “the healthiest” poppy seed muffins are inspired by the television show, This Is Us. The scene comes from the second season when Toby bakes Kate a healthy poppy seed muffin with, “whole wheat flour, unsweetened almond milk, and grape seed oil”. While I’m absolutely not claiming this to be the healthiest muffin, I thought the scene was quite funny and sweet.
Since the recipe seems to only contain whole wheat, the muffin is quite dense so bear that in mind when you’re making it. If you want, you can substitute some of that whole wheat flour for all purpose. Please enjoy!
This Is Us: Healthiest Poppy Seed Muffins
Ingredients
- 1 1/2 cup whole wheat flour 8oz / 227g
- 1/2 cup coconut sugar 2.25oz / 64g
- 1 1/2 tbsp poppy seeds
- 1 tsp baking powder
- 1/4 tsp salt
- 1 whole egg
- 1/2 cup unsweetened almond milk 4oz / 113g
- 1/4 cup grape seed oil
- zest and juice of one lemon
Instructions
- Preheat the oven to 350F. Line a muffin tin with liners and set aside.
- Combine the egg, almond milk, oil, zest, and lemon juice in mixing bowl. Mix to combine. Add the coconut sugar and mix to combine.
- Combine all the dries and fold it into the wet ingredients. Once well combined, scoop the batter into the prepared muffin tin. Bake for 20-25 minutes or until a skewer comes out clean when inserted.
