Phantom Thread: Wild Mushroom Omelet
A recipe for wild mushroom omelet inspired by the Oscar nominated movie, Phantom Thread, starring Daniel Day-Lewis.

- 2 tbsp unsalted butter
- 4-5 medium wild mushrooms, like chanterelles cleaned and dry
- 1 large whole egg whisked
- minced fresh chives 1/2 tsp
- salt and pepper to taste
Heat a saute pan over medium heat. Add 1 tbsp of butter and when it melts, add your mushrooms and cook until golden brown. Season lightly with salt.
Turn the heat down to medium heat. Add the rest of the butter and pour in the whisked egg. Move the eggs around to incorporate it with the mushrooms and then leave it alone to set on the bottom. Season with salt and pepper. Flip one side over to fold it in half.
Transfer the omelet to a plate and garnish with chopped chives.
