Ingredients
  

  • 2 ears fresh corn husked
  • 1/4 cup mayonnaise or mexican crema
  • 1/2 cup cotija cheese
  • chili powder as needed
  • lime juice as needed

Instructions
 

  • Heat a grill on medium high heat. Add the shucked corn and grill on all sides until the corn is cooked through and slightly blistered.
  • Remove the corn from the grill and spread on the mayonnaise or Mexican crema. Roll the corn in the cotija cheese and sprinkle on the chili powder and lime juice. Serve immediately.
