Winnie the Pooh: Gopher's Succotash
Winnie the Pooh: Gopher's Succotash recipe inspired by Gopher's meal of summer squash, salmon salad, succotash, spiced custard, and honey - from the story of Winnie the Pooh by AA Kilne.

- 2 tbsp cooking oil
- 1/2 medium red onion medium dice
- 1 clove garlic minced
- 1 large red bell pepper seeds removed and medium diced
- 1/2 tsp chili flakes or to taste
- 1 tsp ground cumin
- 1 medium zucchini medium dice
- 1 cup diced tomatoes
- 1 cup corn
- 1 cup cooked lima beans or butter beans
- salt and pepper to taste
Heat a cast iron pan over medium heat.
Once hot, add the oil and and the onions. Cook for 3 minutes until soft. Make sure not to brown the onions. Add the garlic and cook for one more minute.
Add the bell peppers and cook for another 3 minutes. Season lightly with salt and pepper. Add the chili flakes and cumin.
Add the zucchini and diced tomatoes, cook just until tender, about 2 minutes. Finally, add the lima beans. Cook for a few more minutes until your vegetables are tender. If you find it's getting too dry, add a splash of stock or water.
